Slow-roast pork joint with hot mango salad

A delicious and tender slow cooked pork joint with a crispy rind. Served on top of a fresh salad made from mangos, beans, and crumbled feta. A nice weekend dinner.

Ingredients

1 twigsof rosemary
800 mlreduced chicken stock
2 ripe mangos
1 bunch of basil
300 gblock of feta
400 gblack beans (soak in water overnight)
1 red chilli
1 large red onion
4 cloves of garlic
Freshly milled salt and white pepper
